AbstractSigurnost hrane znanstvena je disciplina koja se bavi rukovanjem, pripremom i pohranom hrane radi prevencije trovanja hranom. Ona uključuje postupke koje treba slijediti radi izbjegavanja potencijalno ozbiljnih zdravstvenih rizika. Hranom se mogu prenositi bolesti s jedne osobe na drugu, a hrana može služiti kao medij za rast bakterija koje uzrokuju trovanje hranom. Rad se sastoji od sedam cjelina: temeljni sustavi sigurnosti hrane, biološke, kemijske i fizikalne opasanosti u hrani, sljedivost hrane, pravilna prehrana, međunarodna norma ISO 22000 u kontroli i sigurnosti hrane, sigurnost hrane u Europskoj uniji te označavanje hrane. Ovaj završni rad približit će nam koliko je sigurnost hrane bitna za ljudsko zdravlje i koliko je duboko vezana za sve aspekte ljudskog života.

Parallel abstract (English)Food safety is a scientific discipline that deals with the handling, preparation and storage of food in order to prevent food poisoning. It includes procedures that must be followed to avoid potentially serious health risks. Food can transmit disease from one person to another, and the food can serve as a medium for the growth of bacteria that cause food poisoning. The work consists of seven parts: the basic systems of food safety, biological, chemical and physical-danger in food, food traceability, proper diet, the international standard ISO 22000 in control and food safety, food safety in the European Union and food labeling. This final work will bring us how food security is essential to human health and how deeply related to all aspects of human life
