AbstractProizvođači hrane dužni su voditi brigu o sigurnosti hrane i pravilnom označavanju hrane. Osiguravanje sigurnosti hrane doživljava velike promjene na globalnoj razini. Sukladno tome sigurnost hrane u Hrvatskoj bitno je unaprijeđena. Sigurnost hrane postiže se na dva osnovna načina: zakonskim odredbama i privatnom regulacijom. Normama se definiraju sustavi u proizvodnim poduzećima, najpoznatija norma je ISO 9001, i HACCP sustav koji usklađeni u proizvodnim poduzećima čine normu ISO 22 000. Zakonima države štite potrošače. Zakoni u Republici Hrvatskoj morali su se ulaskom u EU prilagoditi europskom zakonodavstvu. Sukladno tome Zakon o hrani morao se je uskladiti s Delegiranom uredbom Komisije (EU) br. 1155/2013 o informiranju potrošača o hrani. Postojeći pravilnici o označavanju i deklariranju hrane prestali su važiti. Ovim radim prikazuju se glavne odredbe koje proizvođači moraju slijediti u označavanju i deklariranju hrane te glavne promjene koje su se dogodile uvođenjem novih zakona i pravilnika. Kod označavanja hrane svi proizvođači se trebaju držati Zakona o hrani i Pravilnika o označavanju posebnih vrsta proizvoda koje proizvode. Kao primjer iz prakse opisan je način na koji se označavaju čokolada i čokoladni proizvodi. Ipak još uvijek proizvođači nastoje naći načina na koje mogu prevariti potrošače.

Parallel abstract (English)Food producers are required to take care about food safety and proper certification of the food. The process of securing food safety is going through big changes on the global scale. Considering that, food safety in Croatia has been improved greatly. Food safety is being accomplished in 2 different ways: through law regulations and through private regulations. Norms are used to define regimes in producement companies; the most known norm is ISO 9001, I HACCP system. When synchronized, these two norms make ISO 22 000 norm. Laws are made to protect the consumers. The laws in Republic of Croatia had to be adapted to European jurisdiction when Croatia became the member of EU. That being considered Nutrition Laws had to be adapted with Delegated Commission directive (EU) num. 1155/2013 about consumer food informing. The existing set of rules about labeling and declaring nutrition has stopped existing. This work displays al the main regulations which food companies must abide to while certifying and declaring food products. While labeling the food all companies have to abide the Nutrition Laws and Regulations about labeling special categories of food products. The method of labeling chocolate and chocolate products will be described in this work as a real-life example. However, there are a number of companies that try to fraud the consumers, and some of those methods will be revealed in this work.
