AbstractVino je poljoprivredno prehrambeni proizvod koji se proizvodi fermentacijom grožđa. Grožđe je plod vinove loze, jedne od najstarijih kultura na svijetu. Vino nastaje procesom fermentacije ili alkoholnog vrenja. U tom procesu se kvasac hrani šećerom iz grožđa i pretvara ga u alkohol i ugljični dioksid. Sami proces proizvodnje vina se dijeli u nekoliko faza, a procesi dobivanja bijelog i crnog vina uvelike se razlikuju. Prva faza je priprema za berbu, sama berba i transport grožđa. Sljedeća faza je primarna prerada grožđa. Zatim slijedi runjanje i muljanje, proces u kojem se, uz pomoć runjače odvaja peteljkovina od bobica, a uz pomoć muljače se valjcima gnječe bobice. Splitsko – dalmatinska županije je geografski smještena na srednjem dijelu jadranske obale, a proteže se od Vrlike na sjeveru do najudaljenijeg hrvatskog otoka Palagruže na jugu. Dijeli se u tri geografske cijeline, a to su priobalje, zaobalje te otoci. Dominira kršoviti i vapnenački sastav terena. Županija se nalazi zoni mediteranske klime jadranskog tipa koju karakteriziraju suha i vruća ljeta te blage i vlažne zime. Otočka klima je topla s obiljem sunca i temperaturama koje rijetko padaju ispod ništice. Hrvatsko vinogradarstvo karakterizira rasparceliranost vinogradarskih površina što pokazuje da su većina vinograda u privatnom obiteljskom vlasništvu. Splitsko – dalmatinska županija je županija sa najvećim brojem proizvođača vina u Hrvatskoj. Najzastupljenije sorte su plavac mali i pošip.

Parallel abstract (English)Wine is an agricultural and alimentary product made in a process of grapes fermentation. Grapes are fruits of grapevine, one of the eldest cultures in the world. What happens in the process of the fermentation is that yeast takes sugar from the grapes and turns it into alcohol and carbon dioxide. Wine making process contains couple of phases and processes of making red and white wine have a lot of differences. First phase is preparation for harvest, the harvest and grapes transportation. Next phase is processing the grapes, removing the petiole from the grapes and kneading the grapes using machines. Splitsko – dalmatinska county is situated in thecentre of Adriatic coast, between Vrlika on the north and island Palagruža on the south. It can be divided in three geographic parts, hinterland, coast and the islands. The ground is detritus and limestone type. The county is situated in Mediterranean climate zone which means that the summers are warm and dry, and winters are mild and wet. The climate on the islands is warm with plenty of sun and with the temperatures that rarely go under zero degrees. Croatian viticulture’s main characteristic is division of vineyards which means that most of them are in private family’s property. Splitsko – dalmatinska county is a county in Croatia with most of the wine manufacturers. Most common wine sorts are plavacmali and pošip. Plavacmali is mostly situated in Split area and on Hvar island.
