Abstract
Ugostiteljstvo se poĉelo razvijati odavno, ali se oblik ugostiteljstva onda i danas razlikuje u svim komponentama svoje biti. Modernizacija i globalizacija, razvoj tehnologije i sva otkrića modernog doba potaknula su ubrzan razvoj turizma koji se temelji na ugostiteljskoj djelatnosti ĉime ugostiteljstvo postaje jednom od perspektivnijih djelatnosti današnjeg gospodarstva. Današnji trend ugostiteljstva je pruţanje gostu jedinstveno i personalizirano iskustvo, a autohtona vina i popratni proizvodi i usluge mogu dati kvalitetan i prepoznatljiv imidţ destinaciji. Za sljubljivanje jela s vinom i pruţanje potpunog enogastronomskog ugoĊaja zaduţen je sommelier. Sommelier je struĉna osoba koja posjeduje širok spektar znanja i vještina i ĉije zanimanje zahtjeva njihovu kontinuiranu nadogradnju. Funkcije modernog sommeliera veoma su opseţnije i sloţenije nego što su bile prije u prošlosti i konstantno se razvijaju još i više.
Abstract (english)
Catering started to develop long time age, but the form of catering today is different in all of components of its bit. Modernization and globalization, technology‟s development and all of discoveries encouraged hurriedly development of tourism what are based on catering activity whereby catering become one of the more perspective activity of present economy. Present trend of catering is to offer unique and personalized experience for guest and autochthonous wines and covering products and services can provide quality and recognized image to the destination. Sommelier is owing for the kerning food with wine and providing of full enogastronomy atmosphere. Sommelier is a competent person who has wide spectra of knowledge and skills and its career require their continuous upgrade. Functions of modern sommelier are more comprehensive and more complex than in the past and they developed more and more constantly.
