Congress tourism is an extremely profitable segment of the tourist offer, which mostly takes place outside the tourist season, most often in the spring and autumn periods of the year. The development of congress tourism requires the existence of a quality offer of congress tourism that will satisfy and reconcile the needs of participants and organizers. Congress participants can be demanding guests, but also able to pay, and all the necessary prerequisites for quality work should be provided, as well as enough free time for the participants themselves. In this context, food has a pronounced significance in congress tourism. Namely, congress participants often come from different regions and, as part of the congress tourism offer, the gastronomic offer often allows congress participants to experience and experience the tradition of the region where the business event takes place through local delicacies and specialties. The aim of this paper is to explain the concept and significance of congress tourism as well as the connection between gastronomy and congress tourism.
