Abstract
Trţište hrane postalo je globalno i problem sigurnosti hrane postaje veći nego ikada. Stoga su donesene brojne norme u kojima se utvrĊuju zahtjevi za upravljanjem sigurnošću i kvalitetom hrane, a podrţavaju postojeću zakonsku regulativu. HACCP (Hazard Analysis and Critical Control Point) sustav prepoznaje i kontrolira zdravstvene opasnosti koje predstavljaju posebno visok rizik za sigurnost hrane. Zakonom o zdravstvenoj sigurnosti prehrambenih proizvoda utvrĊeni su uvjeti koje u pogledu zdravstvene ispravnosti moraju ispunjavati namirnice proizvedene ili uvezene za stavljanje na trţište. Zdravstvena sigurnost uvjet je da hrana postane hrana. Certifikacija je postupak neovisnog ocjenjivanja organizacije, proizvoda ili usluge koji pokazuje usklaĊenost sa zahtjevima specifikacije, definiranim u obliku norme ili standarda.
Abstract (english)
The food market has become global and the problem of food security is becoming bigger than ever. Therefore, a number of standards have been brought which are setting reqiurements for food safety and security managemnet, while supporting existing legislation. The HACCP (Hazard Analysis and Critical Control Point) system recognizes and controls health risks that pose a particularly high risk for food safety. The Law of Health Safety Food Products determines the conditions that must be obey for foodstuffs producted or imported for placing on the market. Health safety is condition for food to become food. Certification is the process of independently evaluating an organization, product, or service that demonstrates compatibility with the reqiurements of the specification, defined in the form of a norm or standard.
