Abstract Biljna ulja su bogat izvor esencijalnih nutrijenata u prehrani ljudi i ţivotinja. Mnoge komponente koje se prirodno nalaze u biljnom ulju pokazale su blagotvorna svojstva na zdravlje ĉovjeka. Biljna ulja se mogu dobiti na raznovrsne naĉine: tiještenjem, centrifugiranjem, ekstrakcijom sa n-heksanom, ekstrakcijom subkritiĉnom vodom uz grijanje, ekstrakcijom superkritiĉnim ugljiĉnim dioksidom. Bogati su vrijednim sastojcima kao što su : vitamini topivi u mastima, provitamini, lecitin, steroli i flavonoidi. Najpoznatije vrste biljnih ulja su suncokretovo ulje, maslinovo ulje, sojino ulje, kukuruzno ulje, bućino ulje, kokosovo ulje, ulje uljane repice i još mnogo druga biljna ulja.
Maslinovo ulje spada meĊu najstarija kulinarska ulja. Zadrţava sva svoja prirodna i prehrambena svojstva zahvaljujući naĉinu proizvodnje, te se smatra nezamjenjivom namirnicom s dugaĉkim popisom ljekovitih svojstava.
Hladno prešano i nerafinirano suncokretovo ulje spada meĊu najzdravije namirnice. Bogato je hranjivim mineralima i vitaminima te moţe pozitivno utjecati na ljudsko zdravlje. Neutralnog je mirisa i okusa koje se najĉešće koristi kao ulje za prţenje, pirjanje i u salati. Palmino ulje naziva se još i uljem crvene palme zbog svoje jarke naranĉasto-crvene boje, a dobiva se ekstrakcijom iz plodova uljne palme. Predstavlja jedno od najĉešće korištenih biljnih ulja širem svijeta. Ima visoku toĉku dimljenja, jako je otporno na oksidaciju visoke temperature i koristi se za pripremu kuhane i prţene hrane.
Abstract (english) Herbal oils are a rich source of essential nutrients in the diet of humans as well as animals. Many of the components naturally found in plant oil have shown beneficial properties to human health. Herbal oils can be obtained in a variety of ways: by blending, centrifuging, n-hexane extraction, subcutaneous water extraction with heating, extraction with supercritical carbon dioxide. They are rich in valuable ingredients such as: vitreous vitamins in fats, provitamin, lecithin, sterols and flavonoids. The most famous types of vegetable oils are sunflower, olive oil, soybean oil, corn oil, buoy oil, coconut oil, rapeseed oil and many other vegetable oils.
Olive oil is one of the oldest culinary. It retains all of its natural and nutritional properties thanks to its production method and is considered as an indispensable ingredient with a long list of healing properties.
Cold pressed and unrefined sunflower oil is one of the healthiest oil. It is rich in nutrients and vitamins and can have a positive impact on human halth. Neutral smell and taste that is most commonly used as frying, sausage and salad oil.
Palm oils is also called red palm oil due to its vibrant orange-red color, and is obtained by extraction from the oil palm fruit. It is one of the most widely used vegetable oils in the world. It has a high point of smoking, is highly resistant to high temperature oxidation and is used to prepare cooked and fried foods.
