AbstractTema ovog diplomskog rada je Nadomjesna hrana. Sama potreba za nadomjesnom hranom ovisi o pojedincu, hoće li to biti iz nekih lifestyle razloga, pokušaja smanjenja ili povećavanje tjelesne težine ili iz zdravstvenih razloga. Primjerice u vegeterijanskoj prehrani i makrobiotici povećana je potreba za nadomjescima za meso kao što su razne vrste sojinih proizvoda, glutena ili gljive. U LCHF i Paleo prehrani jede se više mesa dok je smanjen unos ugljikohidrata pa ovdje postoji potreba za bezglutenskim žitaricama, sjemenkama i orašastim plodovima koje se također mogu koristiti u pripremi kruha. Isto tako bezglutenske žitarice se koriste u prehrani koja se koristi za celijakiju – bolest nepodnošenja glutena. U LCHF i Paleo prehrani je također povećan unos životinjskih masnoća za koje se u zadnje vrijeme sve više smatra da nisu loše za zdravlje ljudi. Posebice se misli na svinjsku mast i maslac koji su bogati oleinskim masnim kiselinama. Zdrava alternativa biljnim uljima je i ghee maslac te maslinovo i kokosovo ulje. Za dijabetes je također vrlo bitna alternativna hrana, posebice prirodni zaslađivači kao med i stevija. Što se tiče nepodnošenja laktoze postoje razne vrste alternativnim biljnih mlijeka od bademovog do kokosovog. No i kozje mlijeko i kefir su vrlo zdrave alternative za ljude koji ne žele u prehrani koristiti kravlje mlijeko. Nadalje i vitaminski i proteinski suplementi su važan dio nadomjesne hrane posebice u različitim dijetama kada je u organizam, neke makronutrijente i mikronutrijente potrebno unijeti putem suplemenata. Nadomjesna hrana je vrlo bitna i u današnje vrijeme jako raznolika. Međutim za zdravu i uravnoteženu prehranu svakog čovjeka najbitnije je da je hrana organski uzgojena bez dodanih aditiva i konzervansa jer to je ono što je zaslužno za masovna oboljenja današnjeg vremena.

Parallel abstract (English)Theme of this thesis is Supplement food. Need for supplement food depends on the individual. It can exist because of some lifestyle reasons, attempt to change weight or healthy issues. For example in vegetarian od macrobiotic diet there is a bigger need for meat supplements like soy products or mushrooms. In LCHF and Paleo diet there’s a need for gluten free grains, nuts and seeds because people eat more meat an less carbs. Also this type of diet is mandatory in celiac disease. In this two type of diets intake of animal fats in increased, especially lard and butter. Ghee, olive oil and coconut oil are healthy alternative for refined vegetable oils. Alternative food is very important for diabetes, especially natural sweeteners like honey and stevia. For lactose intolerant problems there are many alternative milks like rise, soy, coconut or almond milk. Very healthy alternatives for milk are goat milk and kefir. Furthermore, very important parts of supplement food are also vitamin and protein supplements, especially in diets where macronutrients and micronutrients intake is important, because it’s not enough nutrients intake through food. Supplement food is very important and very diverse. But the most important thing for healthy and balanced diet is to eat food that is organic without additives and preservatives, because that caused mass diseases of our time.
