Abstract
Pojam i razvoj HACCP sustava seže u davne 60-e godine 20.st. Sastoji se od nekolicine preduvjeta koje je potrebno provesti kako bi hrana koju ugostiteljski objekt pruža bila zdravstveno ispravna. HACCP sustav naizgled je jednostavan za primjenu no međutim izrazito je kompleksnog karaktera ukoliko se želi poslovati prema uvjetima i normama od kojih se sastoji. Pojam sigurne hrane svakako je jedna od aktualnijih tema današnjeg doba. Nove tehnologije jedan su od glavnih pokretača razvijanja novih procesa kao što su proizvodnja, nabava, distribucija, skladištenje te transport. Stoga je važno pravilno koristiti norme koje HACCAP sustav nalaže u poslovanju sa hranom kako bi namirnice koje se poslužuju bile zdravstveno ispravne i sigurne za konzumiranje.
Abstract (english)
The concept and development of HACCP system dates back to the 1960s. It consists of a number of prerequisites that need to be implemented to ensure that the food provided by the catering facility is health worthy. The HACCP system is apparently easy to apply but it is extremely complex in nature if we want to do business according to the conditions and norms it consists of. The concept of safe food is certainly one of the most current topics of the present era. New Technologies are one of the main drivers for developing new processes such as generation, procurement, distribution, warehousing and transport. It is therefore important to properly use the standards that the HACCAP system imposes on food business to ensure that the foods served are physically fit and safe for consumption.
