Trţište hrane postalo je globalno i problem sigurnosti hrane postaje veći nego ikada. Stoga su donesene brojne norme u kojima se utvrĊuju zahtjevi za upravljanjem sigurnošću i kvalitetom hrane, a podrţavaju postojeću zakonsku regulativu. HACCP (Hazard Analysis and Critical Control Point) sustav prepoznaje i kontrolira zdravstvene opasnosti koje predstavljaju posebno visok rizik za sigurnost hrane. The food market has become global and the problem of food security is becoming bigger than ever.
