Abstract
Alge su vrlo vaţne za ljudsku prehranu, jer sadrţe ogromne koliĉine hranjivih tvari koje se ne mogu pronaći u „zemaljskoj“ prehrani. Lijek su za brojne bolesti i tegobe. No, za sada nisu popularna namirnica u svijetu. Najveći potrošaĉi alga u svijetu su Azijati, te imaju titulu zemalja sa najniţom stopom oboljevanja od raka, srĉanih bolesti i pretilosti, ali kako vrijeme prolazi i ljudi traţe lijek u hrani nema sumnje da će ova namirnica ljudima postati prvi izbor. Alge osim što su najveći proizvoĊaĉi kisika, odliĉan su izvor proteina, minerala, vitamina, vlakana i esencijalnih masnih kiselina te zbog svojih bioaktivnih sastojaka ubrajamo ih u funkcionalnu hranu. Na samom poĉetku rad govori se o funkcionalnoj hrani i objašnjava se razlika izmeĊu hrane i lijeka. A dalje su istaknute alge koje se mogu jesti, te je za svaku navedeno kako izgleda, koje hranjive tvari sadrţi i kako se konzumira u prehrani. I na kraju ovog rada nalaze se recepti tradicionalnih azijskih jela koja u sebi sadrţe alge, te je opisan naĉin kako se Azijati hrane.
Abstract (english)
Seaweed are very important for nutrition, because they contain enormous amounts of nutrients that can’t be found in “terrestrial” nutrition. They are medicine for many diseases and ailments. But, for the time they aren’t popular foodstuff. The biggest consumers of algae are Asians, so they have title of a country with lowest rates of cancer patients, heart disease and obesity, but as time goes on and people seek for cure in food, there is no doubt that this food will become the first choice for humans. In addition to being the largest oxygen producers, they are also excellent source of proteins, minerals, vitamins, fiber and essential fatty acids, and because of their bioactive ingredients, they are considered to be functional foods. On the beginning we discuss about functional food and explaining the main difference between food and medicine. Further, are highlighted algae that can be eaten, and for each is explained how it looks like, what nutrients it contains and how it is consumed in the diet. And at the end of this paper, there are recipes for traditional Asian algae-based dishes, and how Asian people are fed.
