Abstract
Masnoće koje se koriste u svakodnevnoj prehrani predstavljaju vrlo vaţan izvor energije za ljudski organizam. Sve masnoće (ulja i masti) sastoje se od tri vrste masnih kiselina: zasićenih, mononezasićenih i polinezasićenih. One masnoće koje imaju više polinezasićenih i monozasićenih masnih kiselina nutritivno su vrijednije i, samim time, djeluju pozitivno na ljudsko zdravlje. TakoĎer, omega 3 i omega 6 masne kiseline izuzetno su vaţne za ljudsko zdravlje. Njih ima mnogo u biljnim uljima i zbog toga se biljna ulja koriste sve više u ljudskoj prehrani ljudi i ţivotinja. Pored ulja, i masti su vaţne u prehrani jer, osim što su bogati izvor energije, omogućavaju apsorpciju tvari topljivih u mastima (prvenstveno vitamina A, D, E i K). TakoĎer su izvor esencijalnih masnih kiselina, a vaţne su i za sintezu odreĎenih hormona. U današnje vrijeme potrošači sve više prelaze sa masti ţivotinjskog porijekla na masti biljnog porijekla. Sve je više znanstvenih istraţivanja o kvalitetnom ekstra djevičanskom maslinovom ulju, što rezultira time da svaki potrošač postaje sve više svjestan vaţnosti visoke kakvoće ovoga ulja. Osim vaţnosti u zdravstvenom području putem korištenja u prehrani, maslinovo ulje se sve više koristi i kao ljekovito biljno ulje.
Abstract (english)
Fats used in daily diet represent very important source of energy for human body. All oils and fats consist of three types of fatty acids: saturated, monounsaturated and polyunsaturated. That fats which have more polyunsaturated and monounsaturated fatty acids are nutritionally more valuable and they have positive effect on human health. Also, a crucial factors for human health are omega 3 and omega 6 fatty acids which are founded in herbal oils. Herbal oils are used in human diet more and more. Beside oils, fats are also very important in diet because, except source of energy, they provide absorption of substances which are insoluble in fats (primiraly vitamins A, D, E and K). Also, they are the source of essential fatty acids, and they are important for synthesis of some hormons. Nowadays, consumers cross from animal fats to herbal fats. There are more and more science studies about quality extra virgin olive oil and result of that is every consumer become more and more aware of importance of olive oil high quality. Except importance in health area, olive oil is using as healing herbal oil more and more.
