Abstract
Usprkos dosadašnjem napretku znanosti, medicine, promocije, prehrambene industrije i slično, ljudi ipak nisu zdraviji. Zapravo, nikada u povjesti nije bilo toliko kroničnih bolesti, kao od onda kada su nam institucije nametnule nove prehrambene smjernice, a industrija nam nametnula novu procesiranu hranu i nove lijekove. Nažalost svijetom se proširila epidemija raznih modernih, zaraznih bolesti. Stoga se s pravom postavlja pitanje koliko zapravo znamo o namirnicama koje unosimo u organizam? Potrošači su osjetljivi na sigurnost hrane, a sigurnost hrane podrazumjeva da ona neće ugroziti zdravlje ako je pripremljena, dostavljena i konzumirana u skladu s namjeravanom upotrebom. Važno je naglasiti da je uvođenje HACCP sustava kroz pravilno ekipiranje, određivanje kontrolnih i korektivih točaka te sustavno vođenje evidencije rezultiralo poboljšanjem u higijensko-sanitarnoj i zdrastvenoj kontroli u svim proizvodnim fazama, a samim time doprenjelo i dobivanju kvalitetnog i sa zdrastvenog stajališta pouzdanog finalnog proizvoda. U specifičnim uvjetima proizvodnje meda, HACCP sustav usmjerava i provedbu dezinfekcijskih mjera, povečavajući pri tome njenu učinkovitost i smanjujući nepotrebne troškove.
Abstract (english)
In spite of the current progress of science, medicine, marketing, food industry and so on, people still are not healthier. Actually never in history there aren’t so much chronicle disease, as of when our institutions have imposed new dietary guidelines and industry are imposed new processed foods and new drugs. How much do we really know about the food that we bring into our body? Consumers are sensitive to food safety and food security means that it will not endanger the health, if it is prepared, delivered and consumed in accordance with the intended use. It is important to emphasize that the introduced HACCP system, through proper human resource management, determination of control and corrective points, systematically keeping records and so on, is resulted in improvement of hygienic, sanitary and medical controls in all production stages. By implementing HACCP system, we are contributing and obtaining high quality and reliable final product with the health point of view. In the specific conditions of honey production, the HACCP system and directs and implements disinfection measures by increasing its efficiency and reducing unnecessary costs.
